That single fact makes it the most interesting item on the Signature board: it is a spicy, indulgent-sounding sub that happens to be the strongest nutritional pick on it.

The build is fixed: chicken breast, cheese, Doritos, tomato salsa, sweetcorn, peppers and extra-spicy chipotle southwest sauce. Note the chicken breast rather than the shredded rotisserie the other spicy subs use; firmer meat is doing real work here against the soft salsa and the crisps.

The taste is smoky heat over sweetness, with the salsa and sweetcorn pulling against the chipotle rather than reinforcing it. Texture is the best-considered on the Signature board: firm chicken, crunchy Doritos, soft salsa and the pop of sweetcorn all in the same bite. It is genuinely well constructed.

It suits people training and eating for it, which is not a sentence you expect to write about a sub with crisps in it. The catch is the same as the Nacho Ranch: the Doritos are on a clock and go soft within twenty minutes, so this is an eat-in order despite everything else recommending it.

Against the Furious Chicken, which is the other extra-spicy Signature, the Tex Mexan carries more protein, fewer calories and less fat, and costs less. Against the plain Chicken Breast on the classics board, it is more of everything for a couple of pounds more. Both comparisons flatter it.

The value case is the strongest of the nine: lower half of the Signature price range, the highest protein figure on the whole sandwiches menu, and the most thought-through combination of textures on it. If you order one Signature sub, the numbers say make it this one.
